Sometimes we feel weak and we need some super food to pick us up, especially after a long day at work, or after a full day of fasting during the holy month of Ramadan. How about this lentil, kale, and quinoa soup? All the ingredients of this soup are boosters of vitamins, minerals, and anti-oxidants. It is simple to make, nutritious, and so delicious! Time to prepare: 10 minutes/Time to cook: 1 hour

- 1 cup chopped green onions
- 1 cup lentils (Any type)
- ½ cup quinoa
- 250 grams chopped fresh kale (or frozen spinach if kale is not available)
- 3 tbsp. canola oil
- 2 liters water (or vegetable stock)
- 2 cups boiling water
- ½ cup chopped fresh mint
- ¼ cup lemon juice
- 1 tsp salt (or more depending on taste)
- Freshly ground black pepper


Method

  1. Put canola oil in a pot and add the chopped green onions.
  2. Stir well until the onions are soft.
  3. Add water, lentils, and kale.
  4. Mix all ingredients well and let it come to a boil.
  5. Once it starts to boil, lower the heat, cover the pot, and let it simmer for 25 minutes or until the lentils are soft but not mushy.
  6. Add quinoa and 2 cups boiling water.
  7. Add salt and pepper.
  8. Let the soup come to a boil, and let it simmer, covered for around 20-25 minutes or until the quinoa is done.
  9. You can add a little bit of boiling water if you feel that the soup is too thick.
  10. Taste and check the salt and pepper, then add the mint and lemon juice.
  11. Put off the heat and let it sit for 30 minutes before serving.
  12. Serve it warm with fresh mint and radishes.
