A friend of mine called me a couple of days ago asking me for a healthy cupcake recipe for her kids. One of her children eats gluten-free as well. So I came up with this delicious recipe of honey banana cupcakes. Her kids loved the cupcakes, so I decided to share this recipe on the blog. These cupcakes are a healthy and nutritious snack for all your family members.

Ingredients

Servings: 12 cupcakes

Preparation time: 10 minutes/Baking time: 20-25 minutes.

- 3 eggs
- ½ cup light brown sugar
- ¼ cup honey
- ½ cup vegetable oil (I use canola oil)
- 2 ripe bananas, peeled and mashed (around 1 full cup)
- 1 ½ cups gluten-free all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ¼ tsp salt
- 1 tsp vanilla


Method

  1. Put the eggs, vanilla, and sugar in a mixing bowl.
  2. Use electric beaters to beat the eggs and sugar until fluffy and pale.
  3. Add the honey and oil and beat well.
  4. Add the mashed bananas and mix well.
  5. Mix the dry ingredients together (flour, cinnamon, baking powder, baking soda, and salt)
  6. Add the dry ingredients and mix using a spatula until all ingredients are fully incorporated.
  7. Prepare a cupcake pan and line it with 12 paper cupcake cases.
  8. Use an ice cream scoop to scoop the batter inside the cupcake cases.
  9. Fill two-thirds of the cases.
  10. Bake in a pre-heated oven on 190°C for 20-25 minutes.
  11. To make sure that the cupcakes are done, insert a toothpick inside one of them and make sure that it comes out dry.
  12. Put the cupcakes on a rail to cool and keep them in a tight container for up to 5 days.
