Ingredients

- 120 grams dark chocolate (I used Lindt)
- 50 grams butter
- 5 eggs, separated
- 2/3 cup (100 grams) polenta
- ½ cup toasted almond flakes
- ½ cup chopped walnuts
- ¾ cup sugar
- 1 tsp baking powder
Method
- Butter a loaf pan and sprinkle the flaked almonds in the bottom.
- Put the butter and chocolate in a bowl in the microwave at 30 seconds intervals. (it might take 1 minute total)
- Mix the butter and chocolate and make sure it’s melted but not very hot.
- Put aside.
- Meanwhile, mix the egg yolks with polenta, sugar, baking powder, and walnuts using a spoon.
- Beat the egg whites until you get stiff peaks.
- Add the melted chocolate to the egg yolk and polenta and mix well.
- Fold in the egg whites and mix everything gently.
- Pour the batter over the flaked almonds.
- Bake in a pre-heated oven on 190°C for 45-50 minutes.
