Ingredients

Servings: 10 slices

Preparation Time: 15 minutes/Baking time: 45-50 minutes

- 120 grams dark chocolate (I used Lindt)
- 50 grams butter
- 5 eggs, separated
- 2/3 cup (100 grams) polenta
- ½ cup toasted almond flakes
- ½ cup chopped walnuts
- ¾ cup sugar
- 1 tsp baking powder


Method 

  1. Butter a loaf pan and sprinkle the flaked almonds in the bottom.
  2. Put the butter and chocolate in a bowl in the microwave at 30 seconds intervals. (it might take 1 minute total)
  3. Mix the butter and chocolate and make sure it’s melted but not very hot.
  4. Put aside.
  5. Meanwhile, mix the egg yolks with polenta, sugar, baking powder, and walnuts using a spoon.
  6. Beat the egg whites until you get stiff peaks.
  7. Add the melted chocolate to the egg yolk and polenta and mix well.
  8. Fold in the egg whites and mix everything gently.
  9. Pour the batter over the flaked almonds.
  10. Bake in a pre-heated oven on 190°C for 45-50 minutes.
