All recipes for energy bites have a certain amount of dried fruit, nuts, seeds, and sometimes protein powder. Very few recipes add some grains like quinoa or quinoa flour to them. Our recipe today features Quinoa Queen cereal. This cereal is pure popped organic quinoa with no additives and no sugar. It’s high protein, gluten-free, and sugar-free, and very nutritious. So our energy bites are loaded with dried fruit, nuts, seeds, and the star ingredient is the quinoa cereal Quinoa Queen.

Ingredients

Servings: 12 bites

Preparation Time: 10 minutes/Rolling time: 5 minutes

- 15 dates, pitted
- 3 tbsp. warm water
- 1 cup Quinoa Queen cereal
- ¼ cup unsweetened coconut flakes (desiccated coconut)
- ¼ cup sunflower or pumpkin seeds, toasted and salted
- 1 tsp vanilla
- ¼ cup almond flour (or ground almonds)
- ¼ cup walnuts, finely chopped
- More coconut flakes to roll the bites in


Method

  1. Put the pitted dates and water in the food processor.
  2. Start the processor and make sure that the dates are finely diced.
  3. Add the Quinoa Queen cereal and the sunflower seeds.
  4. Turn on the processor and grind well.
  5. Add the almond flour, vanilla, coconut flakes, and the chopped walnuts and pulse few times.
  6. Put the mix in a bowl.
  7. Put the extra coconut flakes in a plate to roll the bites in.
  8. Start forming the balls and roll into the coconut flakes.
  9. Keep the bites in a tightly-closed container.
