Baby Rocket and White Bean Salad

I got home very hungry today and I didn’t have enough time to prepare lunch, so I decided to make this hearty and delicious salad. It’s healthy, filling, and nutritious. As per, white beans are a major source of fiber and protein especially to vegetarians. White beans are also rich in minerals like calcium, magnesium, phosphorous, and potassium. So, it’s advisable to include white beans in your diet, and they are so versatile and you can cook them in so many different ways, and use them in so many different dishes. This salad is hearty and rich, and it’s a good option to take to work for your lunch.


Servings: 1 (as a full meal) or 2 (as a side dish)

Preparation time: 10 minutes

- 1 can white beans (cannellini or haricot beans), drained and washed
- A bunch (2-3 cups) baby rocket leaves
- 1 tbsp. capers, drained
- 1 small red onion, peeled and thinly sliced
- 10 cherry tomatoes, cut in half

- Zest and juice of one lemon
- ¼ cup olive oil
- ½ tsp salt
- ¼ tsp garlic powder (or one clove of garlic, mashed)


  1. Put all the dressing ingredients in a jar and shake well.
  2. Put the rocket leaves, white beans, sliced onions, capers, and sliced cherry tomatoes in a bowl.
  3. Add the dressing and mix well.
  4. Put the salad in a serving plate and serve immediately.
