Rice salads are always filling and nutritious, especially when they contain brown rice and wild rice. They have deep nutty flavors that enrich the salad and add depth to it. Today we are preparing three-rice salad, where I use three different types of rice, long grain rice, brown basmati rice, and black wild rice. This salad is a full meal by itself as it is rich with flavor and ingredients. You can easily add to it some grilled chicken or fish to add some protein to the dish.

Ingredients

Servings: 4-6

Salad mix
- ½ cup long grain rice
- ½ cup brown basmati rice
- ½ cup black wild rice
- 1 cup frozen green peas
- ½ cup almond flakes
- ½ cup dried cranberries
- 20 cherry tomatoes, cut in half
- 3-4 green onions, finely chopped

Dressing
- ¼ cup lemon juice
- 2 tbsp. apple cider vinegar
- 1 tsp mustard
- 1 tsp honey
- 1 tsp salt
- ¼ cup olive oil
- Freshly ground black pepper


Method

To cook the rice
  1. Put the long grain rice in a pot with 1 cup hot water and ½ tsp salt.
  2. Bring to a boil and lower the heat. Cover the pot.
  3. Let it simmer for 20 minutes or until the rice is well-cooked.
  4. Keep aside to cool.
  5. Put the basmati rice in a pot on the heat.
  6. Add ½ tsp salt and 2 cups boiling water.
  7. Cover the pot.
  8. Let the rice simmer on low heat for around 30-35 minutes or until the rice is well-cooked.
  9. You will notice that there’s still water in the pot.
  10. Drain the rice in a sieve and keep aside to cool.
  11. Put the black wild rice in a pot on the heat.
  12. Add ½ tsp salt and 2 cups boiling water.
  13. Cover the pot.
  14. Let the rice simmer on low heat for around 35-40 minutes or until the rice is well-cooked.
  15. You will notice that there’s still water in the pot.
  16. Drain the rice in a sieve and keep aside to cool.

  1. Put the frozen green peas in boiling water for 3 minutes only.
  2. Turn into a sieve and wash with cold water right away.

  1. Toast the almonds in a dry frying pan.
  2. Put all the dressing ingredients in a jar.
  3. Shake very well.


To assemble the salad
  1. Put the 3 types of cooked rice in a salad bowl.
  2. Add the green peas, toasted almonds, dried cranberries, finely chopped green onions, and cherry tomatoes.
  3. Add the dressing and mix well.
  4. Mix the salad around 2 hours before serving.
  5. Taste the salad before serving and adjust the taste.
