When you are preparing a romantic dinner for you and your other half, you want something easy, fast, and delicious. This recipe is so easy to follow and requires an hour of your time. It’s delicious for dinner or lunch. You can add a side of mashed potatoes or rice, or even pasta, and you turn it into a full meal for your family.


Servings: 2-3

- 10 chicken drumsticks (or 6 drumsticks and two chicken breasts)
- 2 tbsp. vegetable oil (I use canola)
- 2 tbsp. olive oil (it’s important to use olive oil to give the Mediterranean flavors)
- 1 medium onion, finely diced
- 250 grams fresh mushrooms, sliced
- 1 jar or can hearts of artichoke, drained but keep the water
- 1 cup white wine
- Juice of one lemon or more (depending on your preference)
- 2 tbsp. cornstarch
- 1 ½ tsp salt
- Freshly ground black pepper
- ¼ tsp ground cinnamon
- ½ cup chopped parsley


  1. Put the cornstarch, salt, pepper, and ground cinnamon in a big size Ziploc bag. 
  2. Mix the starch, salt, and spices well then add the chicken pieces.
  3. Close the bag and shake it very well, until the chicken pieces are fully covered with the cornstarch, salt, and spices.
  4. Put 1 tbsp. of canola and 1 tbsp. of olive oil in a deep saucepan or pot.
  5. Add the diced onion and stir until the onion is soft and translucent.
  6. Add the sliced mushrooms.
  7. Cook for 2-3 minutes, then take out from the pan and put it in a bowl aside.
  8. In the same saucepan, add the remaining oil and the chicken pieces, and cook on medium heat.
  9. Turn the chicken pieces to the other side once they start to become golden brown.
  10. Add the cooked onions and mushrooms over the chicken.
  11. Cover the saucepan and lower the heat and keep the chicken cooking for 20 minutes.
  12. Meanwhile, mix the water of the artichoke jar with the white wine and pour it over the chicken.
  13. Add the artichoke hearts and bring them up to a boil for 2 minutes, then cover the pot again and let it simmer on low heat for 20 minutes.
  14. Finally add lemon juice and chopped parsley. 
  15. Mix gently and taste.
  16. It might need some more lemon juice if you like it more tangy.
  17. Sprinkle some more chopped parsley on top just before serving. 
  18. Serve this dish with lemon slices on the side.
  19. The good thing about this dish is that you can prepare it all ahead of time.
  20. Just keep the lemon juice and chopped parsley till the last minute before serving.
