Shrimp and avocado go very well together. The tenderness of avocado with the crunchiness of the shrimp makes a very good combination. Today I’m sharing this recipe because it’s suitable to be a starter for a Valentine dinner, as it looks elegant and appetizing on the table.

Ingredients

Servings: 2

- 2 avocados, peeled and crushed
- 1 cup medium size shrimp, boiled and peeled or pre-cooked
- 2 tbsp. mayonnaise
- Juice and zest of 1 lemon
- ¼ tsp smoked paprika
- ½ tsp salt
- 2 tbsp. chopped chives
- Some lettuce leaves and lemon slices for presentation


Method

  1. Put the crushed avocados in a bowl and add 1 tbsp. mayonnaise
  2. Add ¼ tsp salt and half the zest and half the lemon juice.
  3. Add 1 tbs. chopped chives and mix well.
  4. Cut each shrimp into two or three pieces.
  5. Put in a bowl.
  6. Add the remaining mayonnaise, zest, lemon juice, chives, and salt.
  7. Add the paprika and mix all together.
  8. Use a ring to stack the shrimp and avocado.
  9. Start with the avocado.
  10. Put one layer of avocado mix.
  11. Add a layer of the shrimp.
  12. Put another layer of avocado mix.
  13. Put the ring in the fridge until it sets well.
  14. Remove the ring slowly, and start all over again to make another stack of shrimp and avocado.
  15. Lay the lettuce leaves in the serving plate.
  16. Put the stacks in the middle of the lettuce leaves.
  17. Decorate with some chives and lemon slices.
