Sometimes you feel that all you want is a salad, a healthy salad, but sometimes you get bored with greens, tomatoes and the regular cucumber. I like to add few ingredients to a salad and this changes the whole dish. In this recipe, I used roasted potatoes, which is not a common ingredient in a salad, but it was so filling and delicious that I felt I was eating a hearty and filling meal. With the crunch of the walnuts and the sweetness of the orange, it was scrumptious and moreish.
Roasting the potatoes takes some time, but it’s worth the wait. You can make the roasted potatoes ahead of time, and just assemble the salad before dinner.

Ingredients

Servings: 6

- 1 bunch of Arugula (or rocket leaves)
- 1 head of Lollo Rosso (Red Lettuce), shredded
- 2 oranges, segmented
- 15-20 white mushrooms, sliced
- 1 cup toasted walnuts
- 50 grams goat cheese, crumbled (optional)
- 1 kg potatoes, peeled and cubed
- 1 tsp salt
- Freshly ground black pepper
- 1 tsp herbes de Provence (or mixed dry herbs like oregano, thyme and basil)
- 3-4 tbsp. olive oil

For Dressing:
- ¼ cup orange juice (use the juice from the sliced oranges)
- 2 tbsp. lemon juice
- 1 tbsp. apple cider vinegar
- ½ tsp orange zest
- ½ tsp salt
- 4 tbsp. olive oil
- Freshly ground black pepper


Method

Roasted Potatoes

  1. Put the cubed potatoes in a big oven pan.
  2. Add the salt, black pepper, herbes de Provence and olive oil to the cubed potatoes.
  3. Mix well with your hands or with a big spoon until all potatoes are covered with olive oil.
  4. Roast in a preheated oven on 200°C for at least 45 minutes, or until the potatoes are tender and golden.
  5. Put aside until cooled.

Assembling the salad


  1. Put the shredded lollo rosso and rocket leaves in a serving plate.
  2. Arrange the orange segments in the middle and add the sliced mushrooms on the sides.
  3. Add the roasted potatoes and walnuts.
  4. Add the crumbled goat cheese on top.
  5. Mix all the dressing ingredients very well and drizzle over the salad.
  6. Enjoy this salad on its own or next to roasted chicken or grilled steak.
