Ingredients

- 1 small onion, finely diced
- 2 cloves garlic, crushed
- 2-3 cm of ginger root, grated
- 2 tbsp. vegetable oil (I use canola)
- 2 tbsp. crushed peanuts
- 4 tbsp. peanut butter
- 2 tbsp. soy sauce (gluten-free)
- 1 tsp sugar
- 1 tsp apple cider vinegar
- 1 tbsp. zest and juice of lime or lemon
- 2 tbsp. hot water


Method

  1. Put the oil in a frying pan and add the onion.
  2. Sautee the onion until soft then add garlic and ginger.
  3. Cook well until soft.
  4. Add crushed peanuts and peanut butter to the mix.
  5. Add soy sauce, sugar, vinegar, zest, juice, and water and mix well.
  6. Once it starts boiling, put off the heat, and serve it warm with Fresh Spring Rolls.
