My family and I have been to Greece so many times, and we love Greek food. Many of the pies that I always wanted to try contained gluten, but my family would tell me how delicious they tasted. One of these pies was Greek pie with mixed vegetables and Feta cheese. My kids loved it and they also loved spanakopita (Greek pie with spinach), and Tiropita (Greek pie with mixed cheese and eggs). (We are going to try those very soon using gluten-free filo pastry).
Our recipe today is Greek pie with mixed vegetables and Feta cheese. The crust is delicious, so is the filling. All my family enjoys the taste and the texture, and they don’t even notice that it’s gluten-free. The good thing about this pie is that you get your kids to eat a variety of vegetables without even noticing. I assure you they will love the taste!

Ingredients (Crust)

Yields: 10 pieces

- 100 grams cold butter, cut into small pieces
- 1 ¼ cups all-purpose gluten-free flour
- 5-6 tbsp. very cold water (gluten-free flour needs some water to stay wet)
- ½ tsp salt
- ½ tsp sugar
- ¼ tsp baking powder

Ingredients (Vegetable Filling)

- 2 tbsp. olive oil
- ½ cup celery, chopped
- 1 cup sliced mushrooms
- ½ cup broccoli florets (small size)
- 1 cup frozen spinach (or 3 cups fresh spinach), chopped
- 10 cherry tomatoes cut in half
- 5-6 fresh thyme sprigs, leaves only
- ½ tsp salt
- Freshly ground black pepper

Ingredients (Cream Filling)

- 3 eggs
- 100 ml milk (1/2 cup)
- 100 ml cream (1/2 cup)
- 50 grams sour cream (5 tbsp.) 
- ½ tsp salt
- Freshly ground black pepper
- ¼ tsp ground nutmeg
- 3-4 fresh thyme sprigs, leaves only
- 100 grams Feta cheese (crumbled)

Method (Crust)

  1. Put the flour, salt, sugar, and baking powder in a food processor
  2. Add the butter and start on Pulse (or mix in short intervals) until the dough looks like breadcrumbs.
  3. Add cold water one tablespoon at a time while mixing.
  4. Once the dough forms a ball, stop mixing.
  5. Wrap the dough in cling film and put in the fridge for half an hour.
  6. Roll the dough between two sheets of nylon paper.

Method (Vegetable Filling)

  1. Put the olive oil in a deep frying pan and add the chopped celery.
  2. Once the celery is soft, add the mushrooms, broccoli, cherry tomatoes, and chopped spinach.
  3. Cook on medium heat for few minutes, then add thyme, salt, and pepper.
  4. Keep the filling aside until cool.

Method (Cream Filling)

  1. Break the eggs into a bowl.
  2. Beat with a whisk and add the cream, milk, and sour cream to it.
  3. Mix very well until all the ingredients are well-incorporated.
  4. Add salt, black pepper, nutmeg, and thyme to the cream mix.

How to Assemble the Pie

  1. Once you roll the dough out (check video), pierce the bottom with a fork. 
  2. Add the cooked and cooled vegetables to the crust.
  3. Add the cream/egg mix.
  4. Top the pie with crumbled feta cheese.
  5. Bake in a pre-heated oven on 200°C for 45-50 minutes, or until the crust and the top are golden brown.
  6. Serve cold or hot with green salad or on its own as a snack.
