“Roasted potatoes” is one of the most popular dish among adults and kids. It’s the healthy alternative to fried potatoes. You can serve roasted potatoes as a side dish to grilled chicken or fish, or you can serve it as a light meal with salad to your kids. Kids love roasted potatoes! We use olive oil in this recipe and the benefits of olive oil are massive. Olive oil acts as an antioxidant and it helps in reducing inflammation in the body, which is a common sign in Celiac patients.

Ingredients

Yields: 4 portions

- 4-5 potatoes (around 1 kg), peeled and cut into medium size cubes
- ¼ cup olive oil
- 4-5 sprigs of fresh thyme or rosemary (or even a mix of several Mediterranean herbs)
- 1 tsp salt
- Freshly ground black pepper
- ¼ tsp garlic powder


Method

  1. Wash the potato cubes and dry well with a kitchen towel.
  2. Put the olive oil, salt, black pepper, fresh herbs, and garlic powder in an oven pan and mix well.
  3. Add the potato cubes and mix all together very well.
  4. Roast in a pre-heated oven on 200°C for 45 minutes, or until the potatoes are golden and well-cooked.
