Sometimes you don’t feel like cooking a big meal, or even you don’t have the time for it. These chicken skewers are very easy to prepare and marinate. Then all what you have to do is grill them on the stove on a griddle right before dinner.
They’re tasty, healthy, easy to prepare and very appetizing! You can serve them with green salad, baked potatoes, or oven-roasted potatoes with fresh herbs. Kids and grown-ups will enjoy this tasty and easy dinner!

Ingredients

Yields: 10-12 skewers

- 500 grams (around 15 chicken tenders)
- 1 red onion
- ½ green pepper
- ½ red or yellow pepper
- ¾ tsp salt
- ¼ tsp ground nutmeg
- Freshly-ground black pepper
- ¼ tsp ground cinnamon
- ¼ cup olive oil
- 4-5 fresh thyme sprigs
- Zest and juice of half a lime
- Zest and juice of half a lemon


Method

  1. Cut the chicken tender into two or three pieces each.
  2. Cut the red onion into wedges, leaving the stem attached.
  3. Cut the peppers into squares.
  4. Put the chicken tenders, onions, peppers in a bowl.
  5. Add salt, nutmeg, black pepper, cinnamon, olive oil, thyme leaves, zest and juice of lime and lemon.
  6. Mix well and let the chicken tenders marinate for at least 2 hours.
  7. Use wooden skewers and alternate between the chicken pieces, onions, and peppers.
  8. Heat a griddle on the stove on medium heat.
  9. Once hot, start assembling the skewers on the hot griddle.
  10. Once the skewers are golden brown on one side, turn to the other side.
  11. Serve immediately with green salad or oven-roasted potatoes.
