I’ve always liked Waldorf salad; I like the crunchiness, the sweet and savory blend of tastes, and the freshness of ingredients. The Waldorf salad was created at the Waldorf-Astoria Hotel in New York City. To know more about Waldorf Salad, check this link.
It’s very easy to prepare this salad, and many a time it happens that you have all or most of the ingredients at hand. I like to use endives with romaine lettuce, but any kind of green or red lettuce can work.


Yields: 2 full portions or 4 side salads

- 2 endives
- 1 romaine lettuce
- 10-15 red seedless grapes
- 3 sticks celery
- 1 green apple (granny smith is a good option due to its crunchiness and sour taste)
- ½ cup chopped walnuts
- 3-4 strips of grilled chicken, chopped to bite-size pieces (optional)
- ¼ cup mayonnaise
- ¼ cup yogurt (optional) (If you want a recipe free of dairy products, use ½ cup mayonnaise)
- 2 tsp mustard
- Juice of ½ lemon
- 1-2 tbsp. apple cider vinegar
- 2 tbsp. olive oil
- ½ tsp salt
- Freshly ground black pepper


  1. Chop the endives and lettuce and put in a bowl.
  2. Cut each grape into two.
  3. Cut the apple into bite-size chunks (don’t peel).
  4. Cut the celery into very thin pieces.
  5. Add apples, grapes and celery to the lettuce and endives.
  6. Add the chopped walnuts.
  7. In a separate bowl, add the mayonnaise, yogurt (if using), mustard, olive oil, lemon juice, vinegar, salt, and pepper and mix very well using a whisk.
  8. Add the dressing to the salad and mix it all very well.
  9. Add the chicken pieces to the salad (if using) and mix gently. 
  10. Serve the salad fresh!
