Cupcakes are always a favorite for kids, especially when they are chocolate cupcakes. You can involve your kids and ask them to help you in preparing these cupcakes because they are very easy and fun to make!

Ingredients (Cupcakes)

Yields: 12 cupcakes

- 3 eggs
- ¾ cup (100 gr) sugar
- 1 tsp vanilla
- ¼ cup (30 gr) cocoa powder
- 1 tsp (5 gr) granulated coffee (like Nescafe)
- ½ cup (80 gr) semi-sweet chocolate chips like Hershey's (gluten-free)
- ½ cup (80 gr) butterscotch chips like Hershey's (gluten-free)
- ½ cup (120 ml) coconut oil or canola oil
- 1 cup (250 ml) almond milk or any milk of your choice
- 1 cup (140 gr) gluten-free all-purpose flour
- 2 tbsp. (20 gr) corn flour (starch)
- 1 tsp (5 gr) baking powder
- ½ tsp (2.5 gr) baking soda

Ingredients (Frosting)

- ¼ cup (40 gr) semi-sweet chocolate chips
- ¼ cup (40 gr) butterscotch chips
- 2 tbsp. (20 gr) butter

Method (Cupcakes)

  1. Put the eggs in a bowl and add the sugar and vanilla.
  2. Beat with electric beaters or hand whisk.
  3. Add the oil gradually while beating until fully incorporated.
  4. Heat the milk in the microwave for 1 full minute until very hot.
  5. Put the chocolate chips, butterscotch chips, and coffee granules in a deep bowl.
  6. Add hot milk to the chips and leave for couple of minutes without stirring.
  7. Meanwhile, mix the dry ingredients (flour, corn flour, cocoa powder, baking powder, and baking soda).
  8. Stir the chocolate and milk and make sure that the chips have fully melted.
  9. Start by adding 2 tbsp. of flour mix to the egg mix, then add a little bit of the melted chocolate.
  10. Alternate between flour mix and melted chocolate while beating until everything is well-mixed.
  11. The batter will be a bit runny. 
  12. Prepare a cupcake tin and line it with 12 cupcake cases.
  13. Pour the batter into the cupcakes and bake in a pre-heated oven on 190°C for 25 minutes or until the inside of the cupcakes is dry.

Method (Frosting)

  1. Put both chips and butter in a bowl in the microwave for 30 seconds.
  2. Mix the chips and butter very well.
  3. If they didn’t melt well, put them for 30 more seconds.
  4. Put the frosting in the fridge for 30 minutes before using.
  5. Spread the frosting on each cupcake and top with chocolate and vanilla sprinkles like Wilton (gluten-free).
