Every day I have clients visiting my bakery/coffee shop and asking me for Paleo desserts. So I started to introduce few items to the menu that are strictly paleo. One of the new items were these muffins that became a favorite in no time, so I thought of sharing them with you today. Try them and rest assured that you and your family are enjoying a dessert that is guilt-free, healthy, and very nutritious.

Ingredients

Yields: 10-12 muffins

- ½ cup coconut oil
- ½ cup natural maple syrup or raw honey
- 2 mashed bananas 
- 1 cup pumpkin puree (Use can or boil and mash some pumpkin)
- ¼ cup almond milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- Pinch of salt
- 1 tsp cinnamon
- ½ tsp ginger powder
- ¼ tsp nutmeg
- ¼ tsp ground cloves
- 1/3 cup rolled oats (certified gluten-free oats if possible)
- ½ cup coconut flour
- 2 eggs
- 2 tbsp. pumpkin seeds

Method

  1. Put the eggs in a bowl and add to them vanilla, maple syrup, coconut milk, and coconut oil. 
  2. Mix well using a whisk.
  3. Mix the spices together (cinnamon, cloves, nutmeg, ginger) and add baking soda.
  4. Mix the dry ingredients (oats, coconut flour, pumpkin seeds, salt)
  5. Add the spices, mashed bananas, and pumpkin puree to the egg mix and stir well.
  6. Add the dry ingredients and mix well.
  7. Pour in muffin cups and bake in a hot oven (190°C) for 40-45 minutes.
