They say “an apple a day keeps the doctor away”, but sometimes you don’t feel like eating the boring apple. Try it stuffed with walnuts and baked in the oven and you will change your mind about the apple. Walnuts have many beneficial properties too. They help reduce the risk of many cancers. They also contain amino acids that fight heart disease. Walnuts are rich in Omega 3 fat (ALA) which is anti-inflammatory, and this is very important for people with Celiac disease. Needless to say that this recipe is gluten-free.


Servings: 6

- 6 apples (preferably red because they hold their shape better)
- ¾ cup chopped walnuts
- ½ tsp cinnamon
- Freshly grated nutmeg


- 1 cup sugar
- ½ cup water
- 1 tbsp. lemon juice


  1. Put the sugar, water, and lemon juice in a saucepan on the heat. 
  2. Bring to a boil, then lower the heat and let it simmer for 5-6 minutes. 
  3. Meanwhile, peel and core the apples. 
  4. To prepare the filling, put the chopped walnuts, sugar, cinnamon and nutmeg in a bowl. 
  5. Add 2 tablespoons of the hot sugar syrup to them and mix well. 
  6. Grease a baking dish. 
  7. Put the apples in the baking dish and fill them with the walnut filling. 
  8. Add some syrup over the apples and bake in a pre-heated oven (200°C) for 40 minutes or until the apples are done. 
  9. Serve warm or cold. 
  10. You can serve the apples with ice cream or whipping cream if you can have dairy products.
