I call this ultimate pasta salad because it is really delicious and moreish. It is so good that you can have it on its own as a main course. It's so filling and nutritious. Try it and enjoy it with the whole family!

Ingredients

Yields: Four portions

- 250 gr. Gluten-free pasta (you can use, spirale, farfalle, or even penne) I used Glutino brand
- 1 big carrot, grated
- 1 can corn (400 gr.)
- 1 can green peas (400 gr.)
- 1 can tuna in olive oil (250 gr.)
- 2 cucumber pickles or gherkins, chopped
- 15 green or black olives, deseeded and chopped

Dressing

Drain the tuna and keep the oil for the dressing.
- 1 cup mayonnaise (You can use light mayo)
- Juice of one lemon
- ½ tsp salt
- Freshly ground black pepper
- The oil from the tuna can

Put all the dressing ingredients together in a jar and shake well.


Method

  1. Put a big pot on the heat with 2 liters water and 2 tsp salt.
  2. Let the water come to a boil.
  3. Add the pasta and let it cook for 12 minutes (or follow package instructions).
  4. Once done, drain the pasta and wash with cold water.
  5. Put the pasta in a deep bowl.
  6. Add the peas, corn, pickles, olives, and tuna.
  7. Add the dressing and mix very well.
  8. Keep in the fridge for at least one hour for all the flavors to blend well.
